French Toast Blondies

Weather has crazy effects on people.

These blondies are pretty simple. The fat is replaced with garbanzo beans.

French Toast Blondies

Ingredients
1 can garbanzo beans (15.5 oz)
1/2 cup soy yogurt (can sub. apple sauce for low calorie)
1/2 cup peanut butter (I used Better’n Peanut Butter)
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 1/2 tsp butter flavoring
1/2 cup organic brown sugar
1 1/2 cups oats
3/4 cup Cinnamon Toast Crunch (or Cinnamon Life cereal, which is vegan!)

In food processor, combine garbanzo beans and yogurt until creamy. Transfer mixture to large bowl.

Mix in peanut butter, then baking powder, baking soda, salt, and butter flavoring. Add brown sugar and mix until just combined. Stir in oats and Cinnamon Toast Crunch cereal with spoon.

Spread mixture into small, square dish lined with parchment paper (I used an 8″ by 8″, you can use a smaller pan for thicker blondies). Bake in 350 degree oven for 35 minutes, or until top is browned. Let cool in pan, then cut into 2″ squares.
