Lemon Basil Cookies

Lemon Basil Cookies
(adapted from My Baking Addiction 

1/2 cup butter
1/2 cup nonfat Greek yogurt
1 cup sugar
2 tb honey
1 egg
1 tsp vanilla extract
2 1/2 cups whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Zest and juice of 1 lemon
2 tb basil, chopped

Cream butter, yogurt, and sugar for 1 minute on medium speed with electric mixer. Add in honey, egg, and vanilla, and blend until fluffy.

In separate bowl, combine flour, baking powder, baking soda, and salt. Combine with fork.

Mix dry ingredients into wet, stirring with spoon until just combined. Zest lemon and add juice, and stir to combine. Lastly, stir in fresh chopped basil leaves.

Scoop dough (pro-tip: use an ice cream scoop) onto non-stick cookie sheet. Bake at 350 degrees for 10 minutes.

If desired, drizzle with basic powdered sugar icing and garnish with additional lemon zest.
