Mini Chocolate Banana Pies

Things people don’t appreciate enough:

-The way a fox’s cry sounds like a human.

-The way streetlights reflect off of wet asphalt

-There are massive whales floating around the ocean with no conception of humans


Mini Chocolate Banana Pies

3 mini graham cracker crusts (basic recipe here)
1 very large banana, sliced (about 18 slices)
Chocolate sauce, 1/3 cup per pie (recipe here, vegan recipe here)

Line crusts with sliced bananas, with a few on bottom and the rest lining the sides. Pour chocolate sauce over bananas, up to the rim.

Espresso Meringue Topping

2 large egg whites
3 tb granulated sugar
2 tsp instant espresso powder

Beat egg whites on low speed until foamy, then gradually add sugar one tablespoon at a time, beating until stiff peaks form. Mix in espresso powder until just incorporated.

Top pies with meringue using piping bag with 1/4 in tip, then bake in 325 degree oven until edges and top are browned, about 7-10 minutes. Drizzle pies with additional chocolate sauce, if desired. Makes 3 mini pies.


I recommend eating these with hazelnut coffee.
